In 2010, Georges unconsciously carried on his father’s avant-garde spirit by daring to create a Provence rosé aged in wood, becoming one of the pioneers of this new approach. Since then, the cellar has been enriched with 16 Austrian oak demi-muids, carefully selected to respect the identity of our terroir and wines. These barrels, dedicated to the vinification and ageing of our gastronomic cuvées, are crafted in one of the oldest artisan cooperages, Maison Stockinger. Nestled at the foot of the Austrian Alps, this family business with 300 years of history carefully selects the finest oak and masters the lightest toasting, imparting structure, typicity, and finesse to our matured wines: 946 rosé, 946 Blanc, and ELEVAE.

By striking a perfect balance between traditional methods and modern techniques, winemaker Georges Gassier and oenologist Léa Rouyet bring out the unique character of the Sainte-Victoire terroir in their expressive and distinctive white and rosé wines, under the Côtes de Provence and Côtes de Provence Sainte-Victoire appellations.
Here, each vine is carefully nurtured and pruned using the cordon de royat technique, adopted for its precision and the balance it brings to the vines.
The winemaker’s gaze and hand remain our most valuable tools.

From the vineyard…
Living right in the heart of the vineyard and supported by his team, Georges has spent almost 30 years tending the 26 micro-parcels, where each vine thrives in carefully analysed and cultivated soil to create ideal conditions. As a true artisan winemaker, he adapts and works with nature at every stage of the vintage – from winter pruning and row management to vine training, bud thinning, grape observation, and harvests.

Working alongside his father Antoni, Georges’ passion for winemaking was born in the cellar. The precision and high standards demanded by this environment sparked his calling.
Since its inception, the expertise of Maison Gassier has been embodied in this raw cellar, which has always housed concrete tanks crafted into its very walls.
Over the years, these 11 tanks have formed an inseparable and inexplicable bond with our signature cuvée, 350 – Le Pas du Moine, giving it its uniquely distinctive character. While the concrete tanks symbolise a strong identity in our wine production, the drive to innovate has never wavered from the Gassier ethos.
