The expression of a terroir

The cuvée Le Pas du Moine – 350  is named after the ancient path once travelled by monks to reach the Croix de Provence on the Montagne Sainte-Victoire, and “350”, referring to the altitude of our vineyard.
This wine draws its power from the natural freshness of our terroir. The harvests are carried out at night, protecting the grapes from summer temperatures and the risk of oxidation, with each stage in the cellar orchestrated to preserve their fine freshness. Vinified in the historic concrete vats of Maison Gassier, this cuvée reveals the authentic character of the Sainte-Victoire terroirs with precision and purity.

The signature of craftsmanship

Introduced in 2010, this cuvée, with its distinctive signature style and now also available in white, is the fruit of passionate research by Georges Gassier, one of the pioneers in crafting an exceptional matured rosé. Its name, inspired by the altitude of the Croix de Provence on the Montagne Sainte-Victoire, attests to the excellence of this wine, which reaches new heights every year.
This plot-selected cuvée is vinified and matured in Austrian oak demi-muid barrels sourced from one of the world’s oldest traditional cooperages, Maison Stockinger. Each vintage bears the stamp of mastered craftsmanship, creating a cuvée with a distinctive identity, marked by a balance of freshness and complexity.

The spirit of a great wine

Much like the Montagne Sainte-Victoire, ELEVAE has risen to the highest rank, that of a great wine with unrivalled ageing potential.
Old Grenache, Syrah and Vermentino vines are selected from the noblest micro-parcels to craft ELEVAE. Fermented then matured for 24 months in Austrian oak demi-muid with regular stirring of the lees, this wine designed for laying down is only produced in the finest vintages in limited quantities of around 2,000 bottles.

Maison Gassier has partnered with Jérémy Lauilhé, Meilleur Ouvrier de France Barman 2023, to create a unique masterpiece: the Gassier Cocktail. A fresh take on the art of enjoying rosé, this cocktail blends delicate floral and fruity notes with a lively freshness on the palate, capturing the essence of Provence in a glass.
