Le Pas du Moine – 350 Côtes de Provence Sainte-Victoire 2024, a Gastronomic Rosé
In the heart of Paris, at the new restaurant Table Penja, the media outlet Cuisine et Vins de France organized a tasting featuring four cuvées of Le Pas du Moine – 350 Côtes de Provence Sainte-Victoire 2024, aiming to find the perfect pairing for a bold dish: caramelized rock octopus served with bongo sauce and vegetarian chili, created by chef Pierre Siewe.
Among the wines selected to accompany this daring dish, our signature cuvée was presented by our winemaker Léa Rouyet, who described it as:
“A very intense nose, bursting with fruit, elegance, and finesse. A wine with beautiful tension, enhanced by the terroir’s remarkable acidity. It could perfectly complement the spices of the dish.”
Ultimately, Le Pas du Moine – 350 was chosen as the best pairing, praised for its lively character that enhances the recipe, as well as for its “citrus aromas and its fleshy yet vibrant profile.”
