The Perfect Pairing with Rosé, According to France’s Best Sommelier, Xavier Thuizat

Rosé isn’t just for sunny days and summer barbecues it can also reveal its full gastronomic potential when paired with the right dishes.

That’s the message from Xavier Thuizat, named Best Sommelier of France, who recommends his favorite pairing to enjoy a rosé wine: red mullet served with Maison Gassier’s aged cuvée, 946 Côtes de Provence Sainte-Victoire Rosé.

“This cuvée, regularly praised by critics, is the perfect example of a gastronomic rosé. Its bouquet, rich with yellow fruits like quince and apricot, is elevated by a subtle touch of vanilla from the oak, and the lees stirring gives it a velvety, caressing texture,” he explains.
