At the foot of Sainte-Victoire Mountain<\/span><\/span>, Vermentino finds a uniquely expressive terroir. Beneath the Proven\u00e7al light, it captures what matters most: the freshness of cool nights, the tension of limestone soils, and the softness of the Mediterranean climate. Le Pas du Moine-350<\/a> explores another dimension \u2014 more taut, more mineral. Aging in concrete tanks preserves the integrity of the fruit while allowing the terroir to express itself fully. \u201cConcrete acts as a revealer. It preserves the wine\u2019s energy intact, without dressing it up.\u201d<\/strong><\/em><\/p>\n

With the 946<\/a> aging cuv\u00e9e, Vermentino gains breadth and depth. The work in demi-muids guides the wine toward greater complexity, texture, and structure. \u201cHere, we seek a form of maturity in the grape variety \u2014 a more structured expression, yet always in balance. The wood should never dominate, only support.\u201d<\/strong><\/em><\/p>\n

A Sainte-Victoire Signature<\/h2>\n

At the heart of every cuv\u00e9e lies the same intention: to respect the fruit, listen to the terroir, and accompany the wine. Night harvesting preserves the brightness of the berries.
